Given my obsession with tasty simplicity it’s rather surprising that only recently have I discovered sugarfree, paleo-friendly banana/egg pancakes. They’re so bloody good!

It’s hard to believe that just a banana and an egg will make the most delicious, moist pancakes, but it’s true. Tried, tested, and devoured.

And then I was making one for my mum the other day who was standing next to me impatiently, and I got irritable. Just like a kid you know, if she wants sweet she wants it NOW.

So I thought let’s be quick and messy and just scramble it up. And what a treat this was! I was done in less than 60 seconds, mum cried out with joy “Ooh, it’s just like traditional Kaiserschmarrn”, and I regained my composure.

So there you have it, Kaiserschmarrn the healthy way.

Kaiserschmarrn is a traditional Austrian dish, best described as a scrambled pancake that makes an incredibly delicious dessert or breakfast.

But of course this version comes without the heavy load of sugar and flour. Just banana and eggs, two natural and nutrient-dense ingredients.

Plus it’s the easiest and quickest dessert ever.

Now I have officially given up flipping perfectly neat pancakes and just make these. Healthy, sugarfree and paleo-friendly pancakes that could not be simpler.

Of course feel free to experiment with the ingredients. The base remains the same, just eggs and banana.

Here are some variations to play with:

  • For more fluffiness add a tiny bit of baking powder.

  • Mix in a little almond or coconut flour.

  • For more sweetness add raisins, dates or honey.

  • Instead of powdered sugar (as traditionally used on Kaiserschmarrn) sprinkle coconut flour, cinnamon, raw cacao or some flaked almonds on top.

  • Make it pretty with a topping of unsweetened coconut yoghurt.

  • Mix in blueberries, strawberries or any other fruit you fancy.

  • Add some fresh lemon juice, lemon peel and a teaspoon of honey (for that you may need two small bananas).

Healthy Two-Ingredient Kaiserschmarrn Pancakes

INGREDIENTS (for one):

  • 1 large ripe banana

  • 1 large egg

  • 1 teaspoon coconut oil or ghee for frying

DIRECTIONS:

  • In a large bowl, break up the banana into several big chunks and then mash it into smaller chunks using a fork.

  • Add the eggs to the mashed banana and stir with a fork until you have a custard-like consistency.

  • If you want really quick you can also mix your egg and banana in a small blender.

  • Place a frying pan over medium heat and melt 1 teaspoon of coconut oil or ghee in the pan.

  • Pour in your banana-egg combo and fry it up baby, just like scrambled eggs.

  • Add any mix-ins last, just before you take it off the heat.

  • Serve warm, it’s heavenly!
