Who would’ve thought that RAW, VEGAN, PALEO & GLUTENFREE could be so damn tasty. Even my dad devoured them, and that says a lot - such a cookie monster :)

Weirdly I’m not crazy about chocolate, but I LOVE anything lemony. Having plenty of lemon trees all over Ibiza comes rather handy.

Coconut Lemon Bliss Balls

These juicy COCONUT LEMON BLISS BALLS are so delicious, it’s rather difficult not to eat half the mixture straight out of the blender. They’re super quick and easy to make and a great alternative to glutenfree baking which can be a little time consuming.

All you need are just a few simple ingredients:

Cashew nuts
Desiccated coconut
Lemon
Honey & a little oil.

I used organic ghee (traditional ayurvedic butter) as I love the taste but coconut oil works just as well. You just need the oil to hold the mixture together.

Coconut Lemon Bliss Balls
 

 Ingredients (for 10 balls):

  • 1/2 cup (65g) raw and soaked cashews

  • 1/2 cup (45g) desiccated coconut

  • juice of half a lemon

  • zest of 1 whole lemon

  • 1-2 tbsp honey

  • 1 tbsp ghee or coconut oil

  • extra coconut for rolling

Directions:

  • Cover the cashew nuts in boiling hot water and let them soak for one hour to make them soft

  • Using a grater first make your lemon zest, then juice the lemon

  • Place 1 tbsp of ghee (or coconut oil) in a small pot and warm up until liquid

  • Place all ingredients into a blender and mix until you get a smooth texture

  • Take large teaspoonfuls of the mixture and roll into balls

  • Coat the balls in a little extra desiccated coconut

  • Place in the fridge for 1 hour minimum before serving

  • Store in the fridge for up to 5 days or freeze them in an airtight container for up to 2 months

Notes:

  • If your mixture isn’t easily rolling into balls, add a little more water, lemon juice or meldet coconut oil and blitz again until it comes together. 

  • Add more of less honey according to taste. I have made them in the past without any sweetener at all to make them candida (un-)friendly and they were just as delicious
