Doesn’t ice cream just taste like carefree, never-ending summer holidays?

Do you remember those long, warm days when you were a kid, running around outside all day with your best friend, red faced and so ridiculously happy when you finally got some ice cream in your hands?

Ooh, yes please!

I still feel like that sometimes here in Ibiza. Not always, but it does happen. And when it’s playtime I want that sweet, delicious taste of summer - without the sugar overload and processed nonsense that my body just can’t tolerate anymore.

So today I’m on a HEAVENLY HEALTHY ICE CREAM mission, easy to make and even easier to devour. No nasties, no guilty pleasure.

Just pleasure, full stop.

This delightful recipe comes from my dear friend & food blogger Marisa at Can Ballet Ibiza whom I haven’t seen in ages because, as the Ibiza season is in full swing, we all seem to be working like maniacs.

Marisa is cooking and spreading her deliciousness for various yoga retreats across the island, while I’ve been teaching yoga nonstop over at La Granja, totally neglecting my blog (I do apologise).

I LOVE sharing my practice, but my body does get tired too. So in between we’re all trying to get some downtime, recharge our batteries and regain our sanity.

To me this means quiet hammock time in the garden.

Feet up, phone off. Book in my hands, banana ice cream in my mouth. I hope you’ll enjoy this recipe as much as I do. Thank you Marisa for letting me share your magic!

Healthy Banana-Choc Ice Cream Popsicles

Healthy vegan banana chocolate ice cream

INGREDIENTS for 8 popsicles:

  • 4 large bananas (or 8 small ones)

  • 1 teaspoon coconut oil or ghee

  • 125g chocolate of your choice (I love 99% dark chocolate which is practically sugar free)

  • 8 ice cream sticks

  • Toppings of your choice: desiccated coconut, crunched nuts, dried berries, cinnamon, vanilla etc.

DIRECTIONS:

  • Prepare your bananas the day ahead by cutting them in half and carefully sliding the ice cream sticks through the middle. Then place them in the freezer, making sure they don’t stick together. Once they’re frozen you can go ahead:

  • In a small pot melt your chocolate together with the coconut oil or ghee, and then pour the liquid chocolate into a tall, narrow glass.

  • Get your frozen bananas out of the freezer and dip them one after the other into the chocolate. If you like a thick chocolate coating over your bananas (yes please) then hold them in the liquid chocolate for a few seconds.

  • Add your toppings (crushed nuts, flavourings, coconut etc.) immediately as the chocolate covering will get solid over your frozen bananas pretty quickly.

  • Place your banana ice cream pops back into the freezer and enjoy whenever you get the munchies.
