VEGAN ZUCCHINI SPINACH SOUP
IF IN DOUBT, SOUP IT BABY!
I’m so into soups at the moment. EFFORTLESS, WARMING, NOURISHING.
Digging deep into the ancient wisdom of Ayurveda to heal my body (and mind) made me realise that all the raw food I’ve been eating for years isn’t actually that great for me. My DIGESTIVE FIRE, as they call it, simply isn’t strong enough.
What you eat is super important, no arguments there. But what you can digest is even more important.
Proper digestion and assimilation are key to optimal health and wellbeing.
So last night, craving some green nutrients and looking in the fridge to see what’s there, I got my two zucchinis out, a little frozen spinach, some sunflower seeds… and voilla - this soup was made in no time.
EASY, TASTY, WHOLESOME COOKING.
With just a few simple ingredients there’s no messing around in the kitchen. Perfect for a quick weekday dinner. As it ended up being a lot more than I had thought, I now have one portion waiting for me in the freezer. Best convenient food ever!
EASY VEGAN ZUCCHINI SPINACH SOUP
INGREDIENTS for 2 portions:
2 large zucchini, sliced
2 handful spinach
2 red onions, finely chopped
2-3 cloves of garlic
½ red or green chilli, finely chopped
1 tablespoon coconut oil
2 tablespoons sunflower seeds, pre-soaked
800 ml water/veggie stock
Salt & pepper to taste
Place the sunflower seeds into a cup and pre-soak them in hot water while you prepare the rest.
Wash and cut the zucchini into small chunks and set aside.
Finely chop the onion. Heat the coconut oil in a large pot and sauté the onions with a pinch of salt for 5 minutes until golden. Add garlic and chilli and sautée for 2 minutes on a low heat.
Get your zucchini and throw them in with the onion mix. Stir for 30 seconds, and then slowly pour the water/veggie stock into the pot. Simmer for 10-15 minutes until the zucchini is soft.
In the meantime rinse the soaked sunflower seeds.
Add spinach and seeds to the pot, stir for 1 minute.
Using a hand blender, mix everything together until lovely smooth and creamy.
Add salt and pepper to taste.
Top with fresh herbs, nuts and seeds for added omega goodness!
