Detox broccoli coconut soup

I’m having a real phase at the moment… Coconut milk with cinnamon, cardamom & sweet rice for a warming, ayurvedic dessert. Coconut milk turmeric latte - simply exquisite! Coconut milk with root vegetables & red lentils for a nourishing curry. And the obvious: coconut carrot ginger soup.

It’s late February and I’m desperately ready for spring, so in the meantime I’m inviting some tropical flavours into my body & soul through food.

We tend to think that DETOX is all about celery sticks, salads and juices. But if you’re applying the ancient wisdom of AYURVEDA, you may want to save the green smoothie cleanse for the heat of the summer and go with the seasons instead. Make it easy for your body with warming, super nourishing meals.

What we eat is important.

Detox broccoli coconut soup

INGREDIENTS for 2 portions:

  • 1 head of broccoli, approximately 350g

  • 2 white onions

  • 3 cloves of garlic

  • 1 tablespoon freshly grated ginger

  • 1 can coconut milk (400 ml)

  • 1 tablespoon coconut oil

  • 200 ml water

  • Salt and black pepper to taste

  • Cut the broccoli into small florets, rinse under running water, and set aside.

  • Finely chop the onions. Heat the coconut oil in a large pot and sauté the onions with a pinch of salt for 3 minutes until golden.

  • Add ginger & garlic, and sautée for another 2 minutes on a low heat.

  • Get your broccoli florets and throw them to the onion/garlic/ginger mix. Stir for 30 seconds, then slowly pour coconut milk and water into the pot. Simmer for 10-15 minutes until the broccoli is soft.

  • Using a hand blender, mix everything together for a smooth & creamy consistency.

  • Add salt & pepper to taste.

  • Top with fresh herbs, nuts & seeds for added omega goodness.
